Meet the meat passionate man behind the name the "Angry Frenchman Butcher." Nicolas have deep roots embedded in the rich traditions of French culinary culture, he's honed his craft in the bustling world of slaughterhouses and the dynamic meat industry.
Nicolas's journey involves supplying premium cuts from all around the world to butcher shops and distributors back in France to managing a meat packing plant and live cattle feeding in Southern Alberta. Embark on a flavorful adventure to find a wide variety of cuts and quality!
Nicolas is excited to share his love of meats and butchery with all of the amazing customers.
Julien is from Normandie, France and started in the butchery trade when he was just 13 years old. He obtained his Charcuterie Diploma with Catering, and then went on to receive his butchery diploma.
From there, he made it his goal to experience all facets of the butcher’s profession. To make this happen, he worked for various companies across France including meat distribution, artisan butcher shops, packing plant, grocery stores and eventually owning his own butcher shop in France.
3 years ago Julien moved to Canada, first to Quebec, then found his way to Alberta – the Province of Beef.

Mickaël was born in Thonon-les-Bains, Haute-Savoie, France. From a young age, he had a disposition with meat. His father raised rabbits, cattle, chicken, etc. for French cuisine and Mickaël was responsibility for helping cut the meat.
He started his apprenticeship training at 16 and received his diploma 2 years later. Since then, he has had opportunities to work with butchery and meat companies across France and Switzerland and then most recently, he began his new journey in Canada.
What Mickael loves most about butchery is creating amazing cuts of meat from a carcass. He loves to please his customers with the best pieces of meat as well as helping them try new cuts.
Mickael’s favourite cut of meat would be a thick and marbled slice of bavette or hanger beef cut.
